Mauricio Shattah, an MD, approaches his coffee with the standards of a scientist. Everything is done meticulously from farm practices to picking at the peak of ripeness, to optical and hand sorting. He experiments to bring out the very best of the terroir and flavor. His coffee has been used by many national competitors to win competitions year after year.
Sudan Rumé is a legendary variety that was discovered in 1940 in a wild state in the Boma Plateau, Southeast South Sudan near the Ethiopian border. This area belongs to a region considered to be the birthplace of the Arabica species. Sudan Rumé has long been used by plant breeders as a source of “quality” genes. It was first planted by Inmaculada in 2012 and used by Sasa Sestic who won the 2015 WBC World Barista Championship in Seattle, WA, USA.
José Giraldo has planted Gesha starting at 2050 masl, trailing from the peak of his farm
in layers down makeshift steps toward the river valley below. As one walks through the
sections of Gesha, shrubs selected and cultivated over ten years, tasting the ripe
cherries, the fruit shows delicate and sweet florals that we taste in roasted Gesha

Best of Yemen Auction Winter 2024:
This was our first year participating in the BOY Auction and we intentionally entered it because this was the first year women were put at the forefront of the auction. Of the best 36 coffees, 13 were produced by women. When we decided to enter the auction our goal and mission was to purchase a women-produced lot and that we did. After 7 and a half hours of going back and forth and the highest record prices for all the coffees, we landed on Lot #17. Little Waves Coffee was the only U.S. company to purchase a lot from this auction. We're incredibly proud to source this coffee, pay a PREMIUM price that directly goes to the producers, and share this coffee with you all! The value is worth it when we are talking about quality and the livelihoods of this community being rewarded for producing the Best of Yemen. The next auction is right around the corner and Little Waves Coffee was honored to be a part of the jury to select the next Best of Yemen! This one right here though, has a special place in our hearts and it's worth the price!
We have been enjoying all of these coffee using this recipe to highlight sweetness and a delicate, tea-like mouthfeel.
Our Recipe
Using an Origami S brewer with a Sibarist Fast Cone Filter or a Cafec filter.
-Grind at 950 microns (yes, that's coarse)
-Use a 1:14.3 ratio
-14 grams in 200 grams of 91˚C (196˚F) water
-4 pours of 50 ml each. Let the first pour pre-infuse for 30 seconds. For the following 3 pours, start as soon as you don't see water in the coffee bed.
We are using a Fellow Kettle, which gives you a controlled flow rate (about 5ml per second). Start each pour in the center spiraling out then in in 5 circles.
In total our brew time is about 2 minutes.
