While Yirgacheffe became famous decades ago for being the first place washed coffees were produced and recognized for quality in Ethiopia, Aricha became famous for its natural coffees. The town of Idido and community of Wegida are just a few kilometers from Aricha, and this small area of coffee production changed the whole perspective on Yirgacheffe coffee when a producer from that area experimented in the early 2000s with the first special preparation naturals. Those first Idido and Aricha natural selections became legends in the specialty coffee industry, and these communities continue to be a place recognized for its unique quality and flavor profile.
This lot comes from Abiyot Ageze, a coffee producer who grew up in Yirgacheffe, who continues the tradition of producing natural processed selections from this renown area. With a strong team that works with farmers in the heart of in these areas, Abiyot is dedicated to experimenting and process improvement on all his coffees, but the naturals he makes are a particular focus.
Once coffee is delivered to the processing site, it is put on raised beds and sorted for ripeness. The ripe coffee cherries are turned throughout the day by hand to ensure even drying. The drying process takes roughly 15-20 depending on weather.
This coffee is roasted on the lighter side to bring out these beautiful qualities this region is known for. We're getting blueberry, strawberry, citric acidity, white tea, sweetness through and through and silky mouthfeel. We're in love.
