We're so excited to get to share these coffees with you all. This box set contains 2 limited coffees from the same producer, each processed with a distinct fruit to enhance the flavor of the cup. These are the first of many coffees we hope to get from our partners at Forest Coffee. They are truly making waves in our industry when it comes to adapting to climate change and keeping coffee profitable for producers from small communities in Colombia. These coffees are part of their innovation series.

Processed by a younger producer named Brayan Alvear, he and his family collect cherries from their farm (San Adolfo) and other producers in the surrounding areas buying their cherries at higher prices than they would get anywhere else and put the cherries through these experimental processes to enhance the cup quality, cup score and ultimately raise the price they receive for their coffee. These coffees are processed with a pre-fermentation of 24 hours in a plastic bag, followed by 24 hours in cherry aerobically to be then depulped and fermented with fruits that have been dehydrated and ground to have a higher concentration of flavors during 5 days anaerobically, and dried for 10 days mechanically with a stall of 5 days to promote higher retention of flavors.

While different fermentation processing methods have increased over the years and can feel like a gimmick, there is something beautiful to seeing smaller, indigenous communities using these methods to enhance their cup quality by still using what is surrounding them and ultimately paving the way for opportunities to increase the value and price they are getting for their hard work. We are excited and honored to roast, cup, taste, and share these coffees. We hope you enjoy it, it is truly unlike any other coffee we've ever tasted here.
